Roasted Corn Vegan Tacos

Roasted Corn Vegan Tacos


  • Olive oil – 3 tablespoons
  • Chili powder – 1 teaspoon
  • Salt and ground pepper – for taste
  • Cabbage, roughly chopped – 1 cup
  • Green Onions, Green and White both parts – ½ cup
  • Fresh Cilantro, chopped – 1/3 cup
  • Sweet corn, boiled – 1 cup
  • Fresh lime juice – 2 to 3 tablespoons
  • Avocado, diced – 1/3 cup
  • Corn Tortillas – 8
  • Hot sauce, chopped cilantro – for optional garnishing



  • Preheat oven at 425 ̊
  • In a medium-size bowl, combine cabbage, green onions, cilantro, corn, lime juice olive oil, and Mix to combine and set aside for marinate.
  • In a small bowl, combine the diced avocado, lime juice, salt, and Add salt for taste.
  • In a warm pan, over medium heat, warm each tortilla from both sides and put them in a plate.
  • For assembling, put a layer of avocado mixture and then add the cabbage and corn mixture and spread to the sides. Top up with a garnishing of your choice and serve immediately.
