Preparation time: 15 minutes
- Raw cashews 1 ¼ cups
- Date 1 cup, pitted
- Ground cardamom ¼ cup
- Orange zest 1 teaspoon
- Coconut flakes ½ cup
- First, grind dates in a food processor until smooth.
- Add cashews to the ground dates and process until finely ground.
- Transfer this cashew and date mixture to a bowl and mix in orange zest and cardamom.
- Shape mixture into 1 inch balls.
- Roll balls into the flaked coconut to coat.
- Refrigerate for 30 minutes and serve!
